Chipotle Lime Marinade

I recently attended a cooking class that was put on at our local grocery store. The teacher was my friend and neighbor Kritsy G. Can I say what an awesome teacher she is! She had some really awesome and SPICY dishes for us to try. There wasn't time to teach all of the recipes but she did cover how to make all of them. One in particular caught my eye. The Chipotle Lime Marinade.

3 jalapeno peppers (seeded and chopped)
1/2 cup packed cilantro leaves
2 garlic cloves
2 med shallots
1/3 cup rice vinegar
1/4 cup olive oil
juice of 2 limes
1 tsp. salt
3 Tbs honey

Puree everything except the olive oil and lime juice together. After everything is mixed together with the machine still running add the oil and lime juice slowly.

Marinate chosen meat for at least 3 hours.

Now this has the potential of being pretty hot so I backed off a bit just to make sure I could handle it. I am not a light weight when it comes to spice but I do know that her family likes things as spicy as it can get.
I added only 1 jalapeno, I think that I backed off a bit too much but the end result was still a very tasty piece of chicken, it tasted almost sweet. I cut it all up and threw it in to some fajitas...Yum.
I will definitely be trying some of her other recipes and I would very much recommend trying this one out. Super good and extremely easy to throw together.

* Be very careful when you cut up the jalapenos..if you are a face toucher, eye rubber like I am I would suggest some latex gloves. Nothing hurts worse than adjusting your contact with a jalapeno covered finger :(
